Jimmy's Baked Ziti
-


1 16 oz box ziti past (or penne)
1/2 lb bulk pork Italian sausage
1/2 lb ground beef (can use all ground beef if preferred)
1 medium onion, chopped
2 cans spaghetti sauce 28oz (your favorite)
1 1/2 cup sour cream
1-2 cups mozzarella cheese, shredded
1/2 cup shredded Parmesan/Romano cheese
    
    1- Cook pasta according to package directions, drain
    2- Brown meats and onion unil onion is tender and meat is 
              cooked. Drain.
    3- Mix one can of sauce with the pasta, and one can with the
               meat mixture
    4- Assemble the ingredients in the following order in a 9X13 pan
                a. 1/3 of meat mixture
                b. 1/2 of pasta
                c. Slices of provolone cheese
                d. all the sour cream
                e. 1/3 meat mixture
                 f. All of the mozzarella cheese
                g. Remaining pasta
                h. Remaining meat mixture
                 i. Parmesan cheese
     5- Bake uncovered at 350 for 30 minutes

Jimmy's Pizza Recipe-  Makes 2 large round pizzas

Crust:
1 cup warm water
1 T. yeast
1 t. sugar
1/2 t. salt
2 T oil
2 1/2 cups flour
    1- Mix water, yeast and sugar in bowl, let rest 3 minutes. Add
              remaining ingredients and knead on floured surface.
    2- Divide dough in half and roll out on greased pans.

Sauce: Mix the following together and spread on crust
1  8oz can tomato sauce
1  6oz can tomato paste
1/2 t sugar
1/2 t salt
1/4 t garlic powder
1/2 t oregano
1 T olive oil
dash ground red pepper

Add your favorite toppings and bake at 400 degrees for 15 minutes.

Jimmy's Delicious Green Salad

8 cups torn lettuce (iceberg & green leaf)
1/2 cup sliced mushroom
1/2 cup dried cranberries
1 cup chopped D Anjou pear
1 cup halved pecans
1/2 cup crumbled bacon

Toss together and serve with poppy seed dressing

Jimmy's Sweet Potato Hash

2 large sweet potatos cubed (large)
5 potatos cubed (medium)
2 carrot, chopped
1 polska kielbasa sausage, sliced
1 packet Lipton Onion soup mix

Toss with generous amount of vegetable oil

1 cup brown sugar sprinkled on top

Bake at 425 for 45 minutes
